It comes with great regret, to cancel SDS “POP”, on the 10th of June
I am afraid that due to illness of staff, I will not be able to commit fully and give the full experience that SDS requires. A new date will be given with in the next week, and your tickets will be valid.

SDS “CAMP” 01/04/2012

SDS “camp” is now sold out, sorry….

Please meet at the we are meeting at The Diesel Shop on lower Temple Street Birmingham at 2.30pm. PLEASE DO NOT BE LATE, Dress for the outdoors, you will also need a pen and pad. 

You will be fed and watered throughout the day.

What is SDS? = Secret Dining Society is a POP UP restaurant/dining experience. No information about location/menu/tasks of future events is given out, trust is rewaded with an adventure with food at the center.

A sherry for you and a sherry for me!!!

A cold Saturday night outside Big Bite on Broad street, Birmingham, a place not exactly known for its culinary endeavors and a group of people wait for instructions on what, where and why they are outside Big Bite…….

Is this seriously the home of SDS?



Well, not quite, what awaited them was a short walk to the real home of SDS….literally.

The venue for the evening was an intimate affair in SDS chef Carl Finn’s flat, and what awaited them I hear you say?? A 5 course sherry dinner of course. Yes sherry!!!!! 

With the Chef admitting at the very first moment -
“I really hate sherry, but tonight I will change my mind”

The response was nodding heads and screwed faces, but this is what SDS is all about, messing with people’s heads and their common perceptions on food and drink. The show went on..

The Menu was handed out and the first sherry was poured, with the menu as follows…

‘An evening exploring the delights of Sherry’

Sherry, not exactly the trendiest of fortified wines, has long been ignored by the wider public for it’s sometimes aggressive flavours and confusing styles, yet some of the best chefs in the world are commenting on the magnificent food matching potential of Sherry – with such an abundance of flavour and styles it’s hard to disagree. This evening, we lift the lid on a treasure trove of beautiful Sherries from Jerez, Spain. 

On Arrival: Sangria

First course:
Grilled Sardines & Scallops, Salted Almonds and Gazpacho tumbler

Sherry match:
La Gitana Manzanilla (bone dry with bursts of grapefruit and a salty tang from Sanlucar De Barrameda’s sea breezes).



Second course:

Cured Meats

Sherry match:
La Concha Amontillado / Lustau Palo Cortado (2 similar styles that first begin life as a fino sherry, until the flor yeast – which gives fino its character – is killed off by additional fortification. Flavours of dried fruits, raisons, dates and toffee dominate).


Third course:
Waldorf Salad

Sherry match:
Dry Oloroso: (Produced by Oxidative ageing, this sherry is slightly dry but is packed with rich, nutty aromas and a lingering finish)


Fourth course:
Lamb Tagine

Sherry match:
Lustau East India Solera Sherry (Full bodied, sweet and bursting with flavours of candied nuts, mocha, toffee and raisons)



Fifth course:
A palate cleanser of Grapefruit & Melon
 

Throughout the night all the guest could see ‘Chef’ cooking up the delights that where up for grabs. As the night went on the “sherry” concept took on and people were getting protective over their weapon of choice, the glasses got fuller and views changed. 
 

By the end of the night the lamb Tagine showed that the path of 
sherry “was to be shared with the flavours of food” stated Chef Finn. He continued “SDS is about having fun with food, looking at eating in a different way. If I was to publish that we were doing a 5 course sherry dinner I think we would of had a different crowd all together. We either have a loyal following that trust us or people who dare to try, either way SDS no.7 was a lot of fun”.

The next SDS is “SDS Camp” on the 1st of April 2012
